
Here is a very easy recipe that I like to make in the cooler months.
Here is what you’ll need:

- 1 pound cubed beef stew meet
- 1 can golden mushroom soup
- 1/2 cup chopped onion (I use less)
- 1 T. Worcestershire sauce
- 1/4 cup water (I just use a bit of water and rinse the soup can.)
- 1 T Flax seed (optional)
- 4 ounces cream cheese
- pasta
In the slow cooker, add the meat, soup, onion, Worcestershire sauce, and water. I use less onion because, while I love onions and could eat them for breakfast, lunch and dinner, Dan doesn’t really like them. But I do think some are needed for flavor in this recipe, so I do sneak some in. I am sure to cut the onion into really tiny pieces, so Dan won’t see the onion. Dan, if you are reading, I am just kidding about putting onion in there. I wouldn’t really do this, sweetie, just trying to make my post interesting!
I don’t even stir the ingredients up, just dump it in there, put the slow cooker on low and then go about living life. I like to let it cook for at least 7 hours. The meat will likely be done before 7 hours, but the extra time really tenderizes the stew meet.
I also add 1 T flax seed to the mixture as I am trying to sneak this healthy food into our diet. The addition of 1 T flax seed doesn’t make any significant difference in taste or texture. Ha ha, Dan. I am just kidding again! I wouldn’t do this to you. I am such a card!
Right before eating, I cut the 4 ounces of cream cheese into several pieces, put it into the slow cooker, and let it melt. At this point, I do stir everything up.
Of course, you also have to cook the pasta right before serving. I like flat egg noodles best, but I’ll use any pasta leftover in the cabinet.
Serve the stew mixture over the pasta. We add a side salad, vegetable or fruit, just to round things out a bit. After all, we want to eat healthy. Right, Dan?

I love beef stroganoff–I need to try this one (but I will have to omit those onions!). 🙂

Sounds great Betty! I use to make Stroganoff years ago but for some reason it’s been off my radar. I’m looking for my recipe, but if I remember correctly, I use to use Lipton Onion Soup mix, mixed with the Mushroom soup. Thanks for reminding me! 🙂

Sounds very good! I like using the Crock Pot for hearty meals. I’ve acquired 4 in different sizes to accommodate either just myself or a crowd!! LOL, your hubby must be like my father was about onions! My mother would chop them super tiny to put in the dishes she made. I’ve found that in the Crock Pot they dissolve and while aren’t visible still give the flavor to the dish. My kids didn’t like chopped tomatoes in anything, so I had to put them in the blender before adding to soups and stews!

Your mom and I think alike! And what lengths we go to to make meals our kids would eat! I like crock pots, too, but I have not branched out to the instant pot. What a great dish. We love our crock pot and the many things you can make in it. We like to put a meal in it when we’re going out for the day. Just leave it to cook while we’re running around. Works well, unless like the other day the electric goes out and the pot shuts off! Thanks for sharing and have a fantastic weekend.

Yes, we love our crock pot for the very same reason! So nice to come back to a meal that’s ready! But, if the pot shuts off, maybe it is a sign from above to eat out, order in, or – as we’ve done – eat PBJs. Thanks for always reading and commenting, and enjoy your weekend, too!

Sounds good. I’ll be trying it next time I go to the supermarket. My husband likes onions, but he won’t eat anything healthy for him, especially vegetables. Had to trick him into eatting vegetables by getting P.F. Changs fried string bean fries. Even then he was still reluctant!

Husbands can be worse than little kids sometimes! I’ve never tried or even heard of fried string bean fries, but they sound good. My son, Michael, who is 31 now, wouldn’t eat any vegetables! He did love playing sports though. I told him each green bean was a home run. So, he would eat a few one by one. Good luck getting your man to eat veggies!
